Ragi Besan Cheela

Besan Cheela is a beloved dish in North Indian cuisine due to its simplicity and flavour. This savoury pancake is traditionally prepared from besan (gram flour), chopped onions and basic spices. What makes Besan Cheela truly special is its versatility. We have added our twist to this breakfast item by adding ragi flour to give a nutrition punch. Packed with protein, fiber, and essential nutrients like iron and calcium, it is a great choice for those who want to try including ragi flour.


You can customize it with various chopped vegetables, fresh herbs, or stuffing with paneer to enhance its taste and nutrient profile. We have used chopped onions and grated carrots in this version as it was readily available and we were short on time.  Whether enjoyed with a dollop of plain curd or chutney, Ragi Besan Cheela is sure to satisfy your taste buds while providing a healthy start to the day.

Whether served as a breakfast, a quick snack, or even a light dinner, it never fails to satisfy the palate.




Serves: 2 people, makes: 4-5 cheelas


Ingredients:

Ragi flour (finger millet flour)- 1/3 cup

Besan (gram flour)- 1/3 cup

Carrot (grated)- 1 medium

Onion (finely chopped)- 1 medium

Cumin seed powder- ½ tsp

Red chilli powder- slightly less than ½ tsp (adjust to taste)

Salt- to taste

Oil- for cooking cheelas

 

Method:

  1.  In a large bowl, add all the ingredients except oil and mix it well. Now, start adding water little by little and prepare a lump free batter.
  2.  Check the consistency of the batter to ensure it is not too thin or thick. Add water, if needed.
  3. Allow the batter to rest for 20-30 mins.
  4. Now, give the batter a good mix and add water, if needed before preparing the cheelas.
  5.  Heat a tawa, grease it with little oil and spread a ladle of Cheela batter evenly in circular motion.
  6. Allow it to cook on one side and then flip it over and apply few drops of oil.
  7. After 2-3 minutes, check if it’s well cooked on both the sides. Due to brown colour of ragi flour, you might not be able to see the usual golden-brown spots that appear while preparing dosa/ Cheela.
  8. Once it is done, remove from the tawa and prepare cheelas with the rest of the batter.
  9. Serve it hot with accompaniment of choice. We have served it with curd mixed with mint-coriander chutney to give minty flavour to creamy curd 😊
