If you don’t know what to do with leftover idlis or simply want to try something new with idlis, then this recipe is for you. This is our healthier take on idli upma and it's pretty good to be honest. You can have this for breakfast or dinner and this is quite filling. 😄
Serves: 4 people
Ingredients:
Leftover idlis: 9
White cowpeas/ black eyed peas- 100g (soak overnight &
pressure cook)
Carrot (big)- 1 no. (100g)
Capsicum (medium)- 1 no. (70g)
Onion (medium)- 1 no. (50g)
Red chilli powder- 1 tsp
Gun powder (idli molaga podi)- 2 tsp (adjust to taste)
Salt- to taste
Oil- 2 tsp
Mustard seeds- ½ tsp
Urad dal- 1 tsp
Method:
Heat oil in a pan. Add ½ tsp mustard seeds, let it splutter.
Now, add urad dal and let it splutter.
Then add the chopped onions and saute until it turns
translucent.
Add the veggies (carrots and capsicum) and cook it for a few
minutes.
Once it is cooked, add boiled cowpeas and mix it well.
Add the crumbled idlis, salt, gun powder (idli molaga podi)
and red chilli powder and give it a good mix. Since the idlis and cowpeas are
already cooked, we need to cook for about 2 minutes to let the spices blend
well. Turn off the stove and serve it hot!
