We love Gujarati Undhiyu and make it at least once every winter, but we must admit that it is a labour of love (takes 2-3 hours) to prepare. So, we thought why not use the flavourful base of Undhiyu and make a dish with tofu and green peas, added broad beans for added fiber and vitamins and the entire dish comes together in about 40 min.

Serves- 4
Ingredients:
Tofu- 200 gm
Broad beans (chopped)- 1 cup
Green peas- ½ cup
Cumin seeds- ½ tsp
Asafoetida- a pinch
Salt- to taste
Oil- 2 tsp
For masala:
Green garlic- 3 shoots (chopped)
Coriander leaves (chopped)- 100 gm
Fresh grated coconut- 1/3rd cup
Green chillies- 8 no.
Ginger- 1-inch pc.
Peanuts- 2 tbsp
Sugar- 1 tsp
Method:
🔸In a mixer jar, add green chillies, ginger, green garlic, coriander leaves, peanuts, grated coconut and grind them. Now, add sugar, some water and grind to a fine paste.
🔸In a cooker, heat oil and add cumin seeds. Let it splutter, add asafoetida.
🔸Then, add broad beans and cook for 1 min. Add peas, cook for 1 min.
🔸Then, add ground paste, water, salt and cook for 2 mins. Then, add tofu cubes and mix.
🔸Now, pressure cook till 2-3 whistles.
🔸It is ready to be enjoyed with steamed rice/ chapati.
Notes:
You can also add fresh green chickpeas or fresh pigeon peas, if available.
