A bit about this recipe- Tomato rice has been a childhood favorite of mine. Usually Tamilians eat tomato rice with vadam (fryums). That's how we used to eat it in childhood. This time, we skipped vadam and added tempeh to the rice to make it more filling and increase the protein content of the dish. And, it turned out well. We have tried this dish thrice already.
Btw, this makes for a good lunch option for office/ school.
Without further ado, let's have a look at the recipe. 😄
Serves: 4
Ingredients:
Tomato, chopped- 3 medium
Onion, chopped- 2 medium
Capsicum, chopped- 1 medium
Cooked rice- 3 cups
Tempeh (plain)- 200 gm
Red chilli powder- 1-1.5 tsp (as per spice preference)
Turmeric powder- ½ tsp
Mustard seeds- ½ tsp
Oil- 2 tsp
Salt- to taste
Method:
- Heat a kadhai, add oil. Then add mustard seeds and let it splutter.
- Now add chopped onions, saute for 1-2 mins. Add turmeric powder, mix well and let the raw smell disappear.
- Then add tomatoes and cook for 1-2 minutes. Add chopped capsicum, mix well. Let it cook for 2-3 minutes.
- Add salt, chilli powder. Mix well and add tempeh.
- Cover and cook for another 4-5 minutes.
- Now switch off the stove. Add cooked rice and mix well.
Tomato rice is ready! Eat it as is, or serve with curd and/ salad. Enjoy! 🍽️
