Mango chia pudding

Hello friends,

How about trying some delicious yet, healthy and filling pudding for all your sweet cravings? We got you covered with fruit pudding to beat all those cravings :)

It is a tradition in our home to make sweets on occasions like birthdays and anniversaries. Since we are not very fond of sweets, we denied when our mother asked which sweet to be made for our birthday. Because of certain reasons, we had to cancel our plans of going out and we were kinda disappointed about the same. We half- heartedly decided to binge watch series or some movies. Later in the afternoon, Subha came up with the idea of making this pudding as we had some mangoes in our home and we had been meaning to make it for a long time but never got around making it. We felt that there couldn’t be a better time to make this dish than now, so just grabbed the ingredients and jumped right away to prepare it.

We must tell that it was a great way to spend time together preparing the pudding as well as enjoying it with our family. The pudding was really filling. Chia seeds have a lot of fiber in them.

 


 

Serves: 5 people

 

Ingredients:

Mango- 3 medium- sized

Chia seeds- 10 tbsp (~100 gm)

Almonds- 30 no.

Milk- 500 ml

Honey- 2 tbsp

 

Method:

  1. Soak chia seeds in milk for 2 hours and mix it well to avoid any lumps. You can refrigerate it as well.
  2. Peel the mangoes. Chop one mango into ½ inch pieces and keep aside.
  3. Puree the rest 2 mangoes.
  4. Soak the almonds for 4-6 hours. Peel the almonds and chop them into small pieces.
  5. Add honey to the milk- chia seed mixture and mix well. You can add some milk, if required, to adjust the consistency. It should be soft at this stage as chia seeds would have taken up the milk and increased in size.
  6. Take about 3 tbsp of the chia seed mixture and keep it aside.  Add mango puree to rest of the chia seed mixture and give it a good mix.
  7. Now, you basically have 2 chia seed mixture: mango- flavoured and plain one. Let us see how to put it together. 

Serving:

  1. Take 5 glasses/ serving bowls. Now, add mango- flavoured chia seed mixture in the glasses.
  2. Then, add plain chia seed mixture over it.
  3. Top it with chopped mango pieces.
  4. Garnish with chopped almonds.

Now, mango- chia pudding is ready to be served!

 


Notes:

  • For a dairy-free version, for someone who is vegan/ lactose-intolerant, you can use soy-milk, coconut milk or almond milk.
  • You can also use apple/ banana/ strawberries instead, based on the seasonal availability. Do not blend bananas, else they would turn brown (chop them instead).
  • Try using cashews or walnuts for a different taste.
