M3 Magic tikki aka Moringa- makhana- moongphali tikki

Moringa leaves/ murunga-keerai/ drumstick leaves have been touted as a superfood in the recent years due to their high antioxidant content. Aloo tikki is a famous street food in UP, something we have enjoyed since childhood. Due to the tikkis being deep fired in oil that’s reheated multiple times and awareness of the way food is handled by street vendors, we started making it at home for health and hygiene reasons. We used to serve it with tomato ketchup/ meethi chutney or prepare it in a fancy manner with toppings of choice like pudina and meethi chutney, sev, pomegranate arils etc.



When I came across a  contest to prepare a recipe that includes healthy and traditional ingredients, I was reminded of drumstick leaves that is commonly prepared by my mother as kootu, added to adai or urulaikilzhangu podimas. All of these dishes are tasty and comforting which makes it perfect for everyday cooking. However, I wanted to make something out of the box, so thought of combining a couple of my favourites to churn out a novel recipe. That’s when I came up with this M3 Magic tikki. The M3 in recipe name stands for moringa leaves (drumstick leaves), makhana (foxnuts) and moongphali (peanuts). It did turn out pretty well and helped me win the contest!

Addition of coarsely ground peanuts adds a nice crunch and texture. Adding fresh moringa leaves is highly suggested if you have access to it. If not, fret not and proceed with the dried leaves as that is still a good replacement. Makhanas give a light texture to the entire tikki and takes nutrient status of these tikkis to the next level.

 

Ingredients:

Drumstick leaves- 1 cup

Foxnuts (makhana)- 1 cup

Peanuts- 2 tbsp

Roasted gram dal/ chutney dal- 1/4 cup

Boiled potatoes- 1 cup

Green chillies- 3 nos.

Oil- 1-2 tsp for roasting in tawa

Salt-to taste

 


Method:

  1. Dry roast the peanuts in a pan and allow it to cool. Crush the peanut coarsely.
  2. Dry roast fox nuts and let it cool. Crush it slightly.
  3. Heat oil in a pan and add the washed drumstick leaves and sauté for a few min. Once it is cooked, turn off the stove and allow it to cool.
  4. In a bowl, add sautéed drumstick leaves, boiled potatoes, crushed peanuts and fox nuts, red chilli powder and salt. Mix it well.
  5. Make lemon- sized balls and flatten them between palm of your hands.
  6. Heat a griddle/ tawa. Grease it with oil.
  7. Now, gently place the tikkis and cook them well on both the sides till they turn light golden in colour.

Our yummy and nutritious tikkis are ready to be served. You can serve them with coriander- mint leaves chutney or sweet chutney and enjoy! 😉


Variations/Notes:


  • No Fresh Moringa Leaves? Swap with dried moringa leaves, methi leaves, or spinach based on season and availability.
  • Peanut Allergy? Use cashews or replace peanuts with 1/3 cup of roasted gram dal.
  • Feel free to mix and match ingredients based on what you have on hand!
